Pesto noodles are one of the simplest dishes to make.
They are a great alternative to pasta and it’s one of those things that you will find in every home.
They make a great addition to salads or just about anything else.
You can add a few to your dinner and add a couple to the side of your salads, or add them to pasta, or even to bread.
I love them on their own or mixed with a good tomato sauce.
I think pesto is a great way to make pasta noodles.

Ingredients 3 cloves garlic, minced 1 tablespoon olive oil, plus more for frying (you could use vegetable oil) 1 large onion, chopped 2-3 medium potatoes, peeled and diced 1 cup of pesto (1 1/2 cups pesto, plus extra for frying) 1/4 cup of Parmesan cheese, grated (about 1/3 cup) 2-4 bay leaves, plus salt and pepper to taste 1 cup vegetable stock (or other broth) 1 can red lentils, drained (or more if you’d like to save space) 2 cups of water Directions In a large skillet, heat oil over medium heat.
Add onions and cook for 5 minutes.
Add garlic and cook another minute, stirring occasionally.
Add in the onion mixture and cook until fragrant, about 5 minutes more.
Add the pesto and cook 2-5 minutes more until the pesta is soft and al dente, about 3-4 minutes.
Taste and add salt and/or pepper to your taste.
Serve the pestos with pasta, pasta sauce, and/ or bread.
You could also make them into a pasta sauce and add them with the pestaroni, and add it to salads, soups, or just plain as pasta.
